必需氨基酸
必需氨基酸指人体（或其它脊椎动物）不能合成或合成速度远不能适应机体需要，必须由食物蛋白质供给的氨基酸。例如，赖氨酸、亮氨酸等。动物种类不同，所需的必需氨基酸也不同。对成人而言，必需氨基酸有8种，即：赖氨酸、色氨酸、苯丙氨酸、甲硫氨酸、苏氨酸、异亮氨酸、亮氨酸、缬氨酸。另外，组氨酸为婴幼儿所必需。此外，精氨酸、胱氨酸、酪氨酸、牛磺酸为早产儿所必需。必需氨基酸必须从食物中直接获得，否则就不能维持机体的氮平衡并影响健康。食物中蛋白质营养价值的高低，主要取决于所含必需氨基酸的种类、含量及其比例是否与人体所需要的相近。因此，动物蛋白质和植物蛋白质混合食用，不同的植物蛋白质混合食用，可以提高植物性蛋白质的营养价值。
